· 200 gr black chocolate
· 80ml fresh milk
· Egg yolk 2 pieces
· 320 ml whipping cream
· White sugar 70 gr
· Gelatin powder 5 gr
Boil some water in a small saucepan (make sure the water does not touch the bottom of the bowl), then turn the fire very small. Put the bowl containing 200gr of dark chocolate in small pieces, add 80ml of fresh milk, wait for the chocolate to show signs of melting, use a spoon to stir chocolate and milk together. Remove the bowl from the pot, let it cool.
Take 2 chicken egg yolk into 1 cup, add 50ml whipping cream to be heated, stir well to blend.
Pour the egg cream mixture into the chocolate bowl, add 5gr gelatin to melt, mix well with the method “fold” to blend everything.
In a large bowl, add 270ml of whipping cream along with 70gr of sugar, whip soft whipping cream.
Divide the whipped cream into 2 parts, one by one, fill the chocolate mixture, fold each part to blend, forming a smooth and soft mixture.
Pour the mixture into a mold or glass, put in a cool compartment of refrigerator to cool for at least 4 hours. Decorate mousse with whipping cream (or topping) with a couple of mint leaves on top. Also, can be decorated with sour fruit to balance the taste for mousse.
